good morning!

Do you want an incredibly delicious and simple breakfast idea? Look no further. Over the last three days I have perfected my oatmeal cookie oatmeal recipe.

  1. Get out a microwave safe bowl.
  2. Place 2 large egg whites into the bowl. Toss the yolks.
  3. Add a dash of vanilla, salt, and baking powder.
  4. Add a generous dash of cinnamon.
  5. Measure out 1/2 cup of dry oatmeal.
  6. Add 3/4-1 cup water.
  7. Mix thoroughly and place in the microwave.
  8. Microwave 30 seconds and stir (to ensure that the egg whites cook into the oatmeal, not by themselves)
  9. Repeat microwave/stir cycle until oatmeal is thick and dense.
  10. Top with a very generous dollop of peanut butter.
  11. Spread the peanut butter out over the oatmeal so you get some in every bite. Enjoy!!

Breakfast is after all the most important meal of your day so you might as well make it nutritious, delicious, and very filling. Random fact: by adding egg white to the oatmeal you are gaining 8 grams of protein. Why not!  Simple enough.

I realize that peanut M&M’s are not healthy snacks but they are mandatory car ride snacks.

preview: work & some play!

Reasons why I love this song stem from how artistic the song is represented in this video. The kids are plain adorable. The color blocks are amazing. Oh and the tribal sounds complete it. LOVE.

The featured homemade meal of the week is beef stroganoff:

This was a request from Sam and though I am not a fan of creamy white sauces (I think because I equate them with fatty fat grossness…) I absolutely loved this dish. That may just be because I was the cook.

Into a skillet went 1.5 T of margarine/butter on medium high heat. Cook the beef (used .6 lb sirloin) and then remove from pan and cut into strips. Sautee 1/2 cup onions in the pan and remove when browned. Add 1.5 T of margarine/butter and cook the mushrooms with some tarragon and cinnamon. Decrease the heat to low and add in 4 oz of reduced fat sour cream, the onions, and beef. Serve over egg (no yolk) noodles. This filling meal is great with a side field salad (onions, goat cheese, mushrooms) and some red wine! Enjoy :)

Other than that fabulous meal I have recently broke out my single serving magic bullet like machine and been whipping up mean nutritious shakes using frozen bananas as the base.Snapshot_20110320

Of course,2011 179 I misplaced my phone. That is a mandatory Molly move. I don’t even think I can count the number of times I have lost my phone after a night of fun. I think I have blew through 4-5 phones. Thankfully this time the phone was just misplaced in the back of a car, which just so happens to be about 40 minutes away.

Perhaps a couple too many of these went down?

5. At work a regular daily drinker said

me: no, thank God not me. I had a fat stage this year I guess.

him: oh well I was going to compliment you on your awesome recovery

So was that an insult or a compliment? Rude.

dirty secret.

I secretly LOVE the power of 5 hour energy. I am a constantly over caffeinated human being. Is this healthy? No. Whatever. I LOVE my coffee. I like my tea. I sparingly consume 5 hour energy, vitamin B overdosing, rush of sugar free ‘energy.’

up for the challenge!

This year for LENT I am going to give up and/or do the following:

1- No more snacking incessantly on garlic parmesan croutons. I seriously snack on them for hours on end. I swear once you have 1 crouton you have to have another. It is an addiction, a delicious unhealthy addiction.

2- Eat out one time a week. I feel that since I already work at a restaurant and have restaurant food for 4-5 meals a week already, that I should limit myself to only going out to dine 1 time a week. Sam and I go out to eat quite frequently, so this may actually be a challenge. This means 1 Monday dinner or 1 Yogurtini…not both in a week.

[there are a few exceptions though: St. Patrick’s day & Cali road trip in April]

3- Limit myself to 1 dessert per day.

So there we have it… that will be my next 40 days. I usually am very good at following my lenten goals. One year I gave up meat and hell that lasted for about 3 years or so. Last year I gave up croutons and clearly I am addicted to those cracktons so once 40 days was up I was back to destroying them.

What I really should give up is beer…but that just isn’t going to happen! Girl likes her beer.  A non-lent goal I have also decided to start doing is just to clean up my diet some. Meaning that I want to start incorporating more health, super foods, veggie/fruit and less junk.

Homemade dinner: Sam & Molly’s Sunday Candlelight Dinner!

On Sunday, Sam and I decided that we were going to make a homemade meal. Without a plan we headed to the grocery store and landed on the decision to make meatball subs, roasted green beans & onions, and salads topped with onions, goat cheese, and sweet vinaigrette.  Sam made the salad… YUM!

2011 003 It was probably the best homemade dinner I have had in awhile. Making dinner with someone else makes it even better. Especially when it is a special someone!!

I highly suggest you duplicate this meal. You cannot go wrong with a meatball sub (or veggieball sub) and a good salad paired with red wine/beer.  Loved it! Make sure to remember to eat by candlelight!

study artsy cookies!

so i am really horrible @ being a student. i have a problem studying & lack the attention span to do so. i probably have the ever over diagnosed ADHD. i am sure of this. you also cannot argue with me that it is over diagnosed. 2011 002-1

2011 004Just look how studious I was while studying. YES! taking pictures is obviously the #1 priority while one is (should be) studying.

& then I did not even realize that I was being artsy while taking a snapshot of my EmergenC ‘drank’ in a wine glass:

i made some stella funfetti cake mix cookies using:

1 box funfetti cake mix2011 008

1 large egg

1/4 C +1 T water

1/4 C vegetable oil

bake @375 for 6-8 minutes.

(make frosting from 1 box Jiffy vanilla frosting, 2 T boiling water, shake of cinnamon, dash of vanilla)

 

took 1/2 of these bad boys over to the boys house last night for our steak, chicken, baked potato, and mixed fresh veggie bbq. they went over quite well & made everyone grab multiples. make them now.
